I haven’t worked out today, but that’s not a big deal, because I still have many hours left in this beautiful day. It may sound kind of stupid, but I think I may have pulled a tendon in my hip. Just walking around my house and going and checking the mail hurting ridiculously bad, just a constant tugging on my leg and hip as a walked.
On the bright side I have lost 2 pounds since last week! Hurray and kudos all around!
Lemon Orzo Salad with Asparagus, Spinach, and Feta
Yield: Serves 4
1 cup orzo
Salt-about 1/2 tsp. for boiling water
2 cloves garlic, finely chopped
1 teaspoon olive oil
8 asparagus spears, cut into 1 inch pieces
1 cup packed fresh spinach
Juice of 1 large lemon
1/3 cup feta cheese
Salt and pepper, to taste
1. In a medium sauce pan, bring 4 cups of water to boil. Add the salt. Stir in orzo. Cook until tender, about 10 minutes. Drain orzo and set aside.
2. In a small sauce pan, saute garlic in olive oil. Add in asparagus pieces. Saute for 3-4 minutes. Stir in spinach. Cook until asparagus is tender and the spinach shrinks down.
3. Put the orzo in a medium bowl and add in the vegetables. Squeeze fresh lemon juice over the orzo and vegetables. Stir. Season with salt and pepper. Taste-add more lemon juice if you wish. The lemon I used was huge, so I only needed to use one lemon. If you need more juice, go ahead.
4. Sprinkle feta cheese over the top of the salad. Serve warm. (I also liked the salad cold.)
So I did quit my gym this afternoon, but not before I knocked out some time at my complex’s fitness room. Why did I ignore you, oh fitness room, why?! Well, at least I’ll be spending less money on the gym! I am currently enjoying the utter deliciousness of the shake that I made as my mid-afternoon snack. Almond milk and frozen berries really hit the spot, and it pretty darn healthy!
Oh, and on a personal side note: I followed up on a job application I put in, and the woman recognized me. She was very pleasant, but told me to call them on Friday. Apparently they have been doing some restructuring since the new year and are chucking a deuce to some bad eggs. It was kinda comforting but also a little scary that she told me I was over-qualified to work at a kennel. I told her that I always wanted to work with animals and that my degree shouldn’t be a negative.
And on another wild tangent, since making a New Year’s resolution to do things that make me happy and make me feel better about myself.. I got a camera for Christmas. If it would please the court or the tumblr community.. I might start posting them up! Let me know what you think.
